SHINEFS: Mango Fried Rice with Jiovani Leon Guerrero of Chamorrita Eats

Blades by Crank Presents: Shinarp knives, bold flavors, and local businesses worth supporting

🧑🏽🍳 Meet the SHINEF: Jiovani Leon Guerrero of Chamorrita Eats

In this episode of SHINEFS, we’re back in the kitchen with Jiovani Leon Guerrero, founder and chef of Chamorrita Eats — a Guam-based business serving up Chamoru fusion dishes with heart, flavor, and sustainability in mind.

Today, she’s throwing it down with a dish that’s as creative as it is island-rooted: Mango Fried Rice — a Thai-inspired, flavor-packed bowl that celebrates the overlooked power of mango season and shows how to bring soul into every bite.

And yes — she’s rockin’ a Blades By Crank SHINARP knife to get it done. 🔪🔥

🍚 Mango Fried Rice: Quick-Step Recipe

Want to make this at home? Jiovani breaks it down easy. Here’s a simplified version of her process:

✨ Step 1: Prep the Ingredients

Slice and dice the essentials:

  • Garlic
  • Onions
  • Green onions
  • Mango (ripe but firm is best)
  • Chicken breast (or shrimp, tofu, or whatever you love)
  • Eggs

💡Pro Tip: Use the flat side of your knife to smash garlic cloves for easy peeling. (Yes, it looks cool too.)

✨ Step 2: Cook the Chicken

  • Heat oil in a wok
  • Brown your chicken on both sides
  • Set it aside once it’s cooked through

(Season simply — salt and pepper is enough if your sauce will bring the flavor.)

✨ Step 3: Build the Flavor

  • In the same wok, sauté the garlic, onions, and ginger
  • Toss in your chopped mango
  • Add in your pre-cooked rice
  • Add soy sauce and optional chili paste for color and kick
  • Crack in eggs and scramble them directly into the rice
  • Return the chicken, stir-fry everything together

🥄 Finish with green onions and plate it up!

🌶 Bonus Flavor Hack from Jiovani

Want extra depth and heat? She recommends adding a spoon of canned beef curry for spice. No joke — it hits different. Add a tablespoon (or more if you like the fire 🔥) while stir-frying your rice for a whole new flavor profile.

💛 Cooking with Culture, Passion, and Precision

This isn’t just fried rice — it’s a reflection of what SHINEFS is all about.
